01 · The bean
Slow-ripening cherries on volcanic soil build the sugars that make a cup taste sweet, not sharp.
Only fully ripe cherries are picked, then sorted by hand. Roughly four in every hundred make the cut.
Dried slowly on raised beds and turned by hand every hour. Clean, bright, and never hurried.
Every lot is tasted blind. Only scores of 86 and above ever reach our roaster.
02 · The roast

Twelve kilos at a time. Never more.
03 · The ritual
Fresh, seconds before brewing. Fine like powdered sugar for espresso, coarse like sea salt for filter.
Nine bars of pressure, twenty-five seconds. A shot crowned with thick, hazelnut-coloured crema.
Silky microfoam at 62 °C — glossy and dense, never bubbly. Sweetness without sugar.
Slow and steady. A heart, a tulip, a leaf. Latte art is only patience made visible.
